Bradley “Brad” McCoil
General Manager
With over 20 years as a chef, experience in overseeing multiple award-winning properties, and an honors graduate from Johnson and Wales, it goes to say that Brad McCoil has definitely made a name for himself in the hospitality industry in New England.
Before joining us at Owl’s Nest Resort, he was the General Manager of the Oceancliff Resort in Newport, RI. His past experience also includes working as Corporate Chef for IDC Inc. IDC is a high-end hospitality firm that operates Regatta Place, The Stonehouse in Little Compton, and the schooner “Aurora” in Newport, RI.
As General Manager at Oceancliff, Brad oversaw over 150 events per year with over $14 million in annual food and beverage revenue. The hotel itself produced $02 million in annual revenue. While at Oceancliff, Brad managed many weddings and dinner parties that included celebrities and politicians.
Brad will officially be joining the Owl’s Nest team on May 1, 2022. We are very excited to have Brad apply his impressive skills to our F&B and Event teams. You will be able to find Brad’s office at the Activity Center. Once the season is in full swing you will see Brad around Panorama 682, the Sports Nest, and various other locations at the Nest!
Fun Fact: Brad has cooked at, and been invited to the James Beard house not only once, but twice!
David “Rabbit” Rabbottini
Assistant Director of Golf
David Rabbottini is no stranger to the Owl’s Nest Resort, as he has worked for the past four years as a Starter/Ranger on our golf course. With a Master’s degree in Communications from Boston University, David has worked in a variety of environments. First, as the Alumni Director at Saint Anselm College, then as the Vice President for Commercial Lending at the former Amoskeag Bank. These career paths taught him how to work well in customer service, sales, and in leadership.
Rabbit’s goals are to keep a dedicated eye on golf operations, sales, and staff training. His passion and loyalty to Owl’s Nest Resort will be essential in our future golf-based projects. You will be able to find Rabbit with the golf team at the Sports Nest.
Fun fact: Rabbit is not only a golfer! During the winter, you can find him at Waterville Valley as a certified Ski Instructor.
